At SEGARAN Dining Terrace, guests will be treated to an elevated all-day dining experience, emphasising sustainable ingredients and fresh seafood from local markets. Executive Chef Alessio Nallino and his talented team have crafted enticing offerings that showcase succulent Indonesian and international delicacies.
Highlights include the Traditional Flavor Soiree every Friday from 5:30 p.m. to 11 p.m., the Balinese Megibung Feast, and a delectable 5-course Al Fresco Romantic Dinner available nightly from 6 p.m. to 11 p.m. Additionally, the unique Seaside Enchantment dining program features a 7-course set menu dinner on the beach also available every night. The centrepiece of SEGARAN Dining Terrace is the Al Fresco Italian Night, held Tuesdays and Saturdays from 5:30 p.m. to 11 p.m., offering guests the choice of a set menu dinner or à la carte options.
The Al Fresco Italian Night highlights Chef Alessio’s exceptional culinary talents, bringing the best of his Italian heritage to the table. Guests can indulge in delightful starters like Burrata Tart and Bresaola, made with the finest ingredients, followed by a captivating selection of main courses such as Manzo, featuring seared M5 striploin with black pepper sauce, and Agnelo, offering grilled lamb chop with crispy polenta, braised bell peppers, and mustard jus. Adding to the enchantment, the Al Fresco Italian Night takes place at SEGARAN Dining Terrace, creating a mesmerising ambiance for an unforgettable dining experience under the stars.
SEGARAN Dining Terrace’s new offerings are a highlight of Chef Alessio Nallino’s culinary vision as the new Executive Chef of Jumeirah Bali. Starting his role on 18 March 2024, Chef Nallino brings a fresh perspective to the resort’s culinary outlets, including Akasa Restaurant and Bar, renowned for its grilled delicacies; Maja Sunset Lounge, celebrated for its afternoon tea specials; and the banqueting operations. His culinary journey, which spans his native Italy, Switzerland, Australia, and Vietnam, including a tenure at a Michelin-starred restaurant in Macau, promises a global culinary experience that will surely intrigue and excite our guests.
