THE ULTIMATE SIX-HANDS MEDITERRANEAN DINNER  AT MANDAPA, A RITZ-CARLTON RESERVE

Mandapa, a Ritz-Carlton Reserve is set to host an exclusive dinner prepared by three of Bali’s most renowned chefs: Bayu Timur from Mandapa, Agung Gede from The St. Regis Bali Resort, and Raymond Siek from The Ritz-Carlton, Bali. The three charismatic chefs will join arms together bringing their skills into harmony and present an exquisite SIX-HANDS dinner by the Ayung River on 23rd October 2021 at Kubu Restaurant.

The chef’s signature dishes will be showcased in the 8-course of Mediterranean specialties prepared with fresh-sourced ingredients. To begin the experience, guest can delight with pre-dinner sunset cocktails and canapes at Ambar, Mandapa’s latest bar, perched high on a cliff next to Wantilan (lobby).

The dinner will kick off with the first course from Agung Gede, Citrus Cured Sword Fish Belly combining the fresh ingredients to create a unique gastronomy experience as starter, then continue with Raymond Siek’s Cauliflower Soup with chargrilled beetroot focaccia, smoked paprika to really bring out its flavor.

The mains will be from the three chefs featuring Crusted Gindara by Raymond Siek, Duck Symphony by Agung Gede, and Beef Wellington by Bayu Timur. Serving the guests with seasonal and most vibrant ingredients while paying particular attention to quality, flavor and every detail complimented by their precise and delicate culinary skills. Lastly, Raspberry Lychee Sphere with frozen marshmallow, champagne coulis, raspberry paper followed by Warm Chocolate Mousse making them the perfect desserts to end the night.

Price at IDR 1,450,000++ per person – inclusive of pre-dinner sunset cocktails and canapes at Ambar; Add wine pairing: IDR 1,000,000++ per person.

SIX-HANDS Mediterranean Dinner will start at 6.30pm onwards. To maintain the intimate nature of the experience, seating capacity is limited, advance reservations are highly recommended. Health and safety protocols are applied to ensure the safety and comfort of dinners.

Kubu in Indonesian language means Hut or Shelter, where Balinese farmers keep the rice after harvesting habitually. This tradition inspired Mandapa in designing its signature bamboo restaurant. A tropical breeze and the soothing sound of water set the mood at Kubu which offers an intimate space with 9 private cocoons overlooking the Ayung river to enjoy fine Mediterranean-European cuisine in the option of A-la-carte or degustation menus.
